PB + CC Energy Balls

Peanut Butter Chocolate Chip Energy Balls
  • 1 cup (dry) oatmeal (I used old-fashioned oats)
  • 2/3 cup toasted coconut flakes
  • 1/2 cup peanut butter
  • 1/2 cup ground flax seed
  • 1/2 cup semisweet chocolate chips (or vegan chocolate chips)
  • 1/3 cup honey
  • 1 tablespoon chia seeds
  • 1 teaspoon vanilla extract

Combine all ingredients in large bowl.  Roll into 1-inch rounds.  Refrigerate for few minutes until firm.  Transfer to an airtight container.  Refrigerate and enjoy for up to one week.
